Spring Rolling

As we bloom our way through the Spring, and the Summer Solstice is right around the corner, let's take a moment to wrap and savor this season! 🍃

The spring roll has a long history, and is still nearly ubiquitous in Chinese food today. It is easy to forget that this dish coincides with this season. The initial concept was to harvest the fresh abundance of the season and enjoy it uncooked. 👌🏼 During the Ming and Qing Dynasties, there was a custom of "biting spring", which meant welcoming the season by eating spring cakes. The practice was believed to ward off disaster and evil. How this works is unclear, but you don't have to twist my arm to eat them when they look as good as these! 🍓☀️
